Bananas are very fragile and therefore need several precautions to protect them during the transport and the ripening process.
Bananas are harvested once they have grown but they are still green and therefore not eatable. They are processed and stored at 15 degrees Celsius during their shipping until arriving at our facilities.
Once stored in our ripening chambers, natural conditions of ripening are artificially simulated. During approximately five days, the bananas experience changes in temperature, humidity and ventilation controlled by computers.
This process transforms the starch present in the bananas into sugar that turns the green colour of the fruit into yellow and makes them eatable. This transition of colour comes step by step and allows every customer to select the perfect maturity. This process is well-driven thanks to the knowledge of our ripeners who enhance all the flavour of the bananas.
The quality of the ripening process is also a key point for the conservation of the fruit.
