OUR  RIPENING FACILITIES

FOR BANANAS

Our facilities are composed of the latest technology for the ripening of bananas with 20 chambers located in the basement of our warehouse. Thanks to the knowledge of our ripeners, we offer a range of bananas to our clients according to their needs in terms of origin and maturity which are the keys to sales. 

 

Our bananas from France are coming from Martinique and Guadeloupe islands in the Caribbean. Moreover, we also ripen bananas from Colombia, Ecuador, Costa Rica, Guatemala and the Dominican Republic. 

 

We are members of Fructifrui that is taking care of all the imports of our bananas.

Fructifrui is the third French group of ripeners composed of 9 independent ripeners that have an annual capacity of importing and ripening of 70 000 tones. This group has created a quality and liability link with our suppliers of bananas which is mandatory in order to offer the best product to our clients and final consumers. 


The ripening process

Bananas are very fragile and therefore need several precautions to protect them during the transport and the ripening process. 

Bananas are harvested once they have grown but they are still green and therefore not eatable. They are processed and stored at 15 degrees Celsius during their shipping until arriving at our facilities. 


Once stored in our ripening chambers, natural conditions of ripening are artificially simulated. During approximately five days, the bananas experience changes in temperature, humidity and ventilation controlled by computers. 


This process transforms the starch present in the bananas into sugar that turns the green colour of the fruit into yellow and makes them eatable. This transition of colour comes step by step and allows every customer to select the perfect maturity. This process is well-driven thanks to the knowledge of our ripeners who enhance all the flavour of the bananas.


The quality of the ripening process is also a key point for the conservation of the fruit.
